Plaintain in Spicy Coconut Cream
Recipe can be made vegan or vegetarian by replacing or substituting some ingredients. We do that for our friends, family and our monthly vegetarian days. For the main ingredient, if i cant get the right #plaintain, sometimes i use green #banana that is still green but nearly ripe (outer layer is still hard to touch)

Cooking instructions
* Step 1
A - Prepare banana (see pic below). B - Using mortar and pestle, pound or crush ingredients in B well (see pic below). C - Lightly bruise the lemongrass
* Step 2
Heat your wok or deep pan. Sauté B and C until aromatic. Add sliced banana. Stir and mix well. Add 1/2 cup of water. Cover and cook until banana is soft or fork tender. Add D (seasonings). Stir to mix well. Taste and adjust seasonings accordingly. Leave it to boil again for a minute or two.
* Step 3
Remove from the heat and serve hot with rice.
