LEMON CAKE - Glazed

My foster Mom, Esther used to make this cake. Grandma Ritter made this cake too. Two of my favorite women and one of my favorite cakes!

Ingredient

Cooking instructions

* Step 1

Preheat oven to 350°F.

* Step 2

In large mixing bowl, add box of cake mix, pudding mix, eggs, oil, and then water. Mix well with mixer to add volume.

* Step 3

Pour cake batter into 9"x13" pan and bake according to instructions on box. (approximately 30 minutes @ 350 degrees)

* Step 4

Make glaze while cake bakes. Mix 2 Cups powdered sugar,1 Tablespoon corn syrup, and 1/3 cup warm lemon juice using a wire whip until glossy.

* Step 5

When cake is done, cool for 5 minutes before inserting fork multiple times into the top of cake.

Pour glaze over the top of warm cake and spread evenly over cake. Let cool, cut, and serve as is or with a bit of whipped cream on top.
