Wraps (with Homemade Tortillas)
I recreated something I had at a cafe.
Cooking instructions
* Step 1
Make the tortillas. Put the flour, olive oil, and salt in a bowl and pour in the hot water.
* Step 2
Mix with a rubber spatula. When it becomes cool enough to touch, bring it together and knead on a table.
* Step 3
Once it's smooth, wrap with plastic wrap and let sit at room temperature for 30 minutes.
* Step 4
Prepare the filling ingredients while you wait for the dough to rest. Cut the filling ingredients into easy-to-roll portions.
* Step 5
Divide the dough into 8 portions and roll out as thinly as possible with a rolling pin, and cook both sides in a frying pan over medium heat (you don't need to use any oil).
* Step 6
When cooled, roll up the filling ingredients. Line a dish with foil, place the wraps on top, and top with cheese.
* Step 7
Bake until the cheese has melted, transfer to dishes, and sprinkle with black pepper.
* Step 8
I filled them with mozzarella, tomato sauce, and bell peppers.
* Step 9
The one I had at a cafe was filled with feta cheese and tomato. The arugula was delicious as well.
