Sig's Potato Cake Pizza
Had a potato cake in mind for lunch and decided to bake it in oven rather than in a pan. I covered it with pizza style toppings, except passata as this would make it soggy. Pesto could work though may be spread on top of the tomato. #myfavouriterecipes #mycookbook
Cooking instructions
* Step 1
I use a homemade potato mash and celeriac or garlic mash, that is not runny or sloppy, but if you are in a rush boil three cups of water, then put into a bowl add the powder mash, make sure it is of good quality, stir and leave to stand for a minute, The egg and cornstarch needs to be added whether you use homemade mash or powder mash, mix well.
* Step 2
Grease a baking tray with the oil
* Step 3
Add your potato mash to the tray making a pizza shaped base, about 30 cm big. Bake at 225C for about 20 minutes.
* Step 4
Wash the tomatoes,slice thinly, lay onto the potato pizza
* Step 5
Sauté one thinly sliced onion and one crushed or very finely chopped clove of garlic. Drain fat from it and the onion and garlic mix over the tomatoes on pizza
* Step 6
Season well with thyme, oregano,salt or salt substitute and pepper.
* Step 7
Cut the sheep's or goats cheese into small cubes sprinkle over the pizza
* Step 8
Add the olives and sprinkle with parmesan
* Step 10
Bake for about 25 minutes until slightly browned on 225C. Sprinkle with a little fresh basil.
* Step 11
This makes 12 slices. You can of course use other toppings too.
