Vickys Scottish Potato Salad, GF DF EF SF NF
We grew up on this as a delicious warm salad or side to freshly caught and cooked and oatmeal-breaded herring. Reminds me of being sat around the kitchen table when we were young
Ingredient

Cooking instructions
* Step 1
Dice the potatoes and boil in salted water for 10 minutes until tender, then drain and pat dry
* Step 2
Simmer the peas in another pan for 5 minutes or until cooked
* Step 3
While the peas and potatoes are still warm, mix them together gently in a bowl with the chopped beets, onion and parsley
* Step 4
Fold in the mayo or salad dressing and season to taste
* Step 5
This is a traditional Scottish accompaninent to oatmeal coated herring
