Cheesy Veggie Breakfast Casserole

So I had some leftover chopped veggies from my chicken & pasta dish last night and wanted to use them up before they went bad. Sunday mornings are usually my casserole mornings and it was getting close to brunch time so I made a few revisions to one of my other breakfast casseroles and snuck in the leftover veggies. I have to say it was a hit and I barely had any left to take pics with! :-)

Cooking instructions

* Step 1

Preheat oven to 400°F.

* Step 2

In a medium pan (or microwave), brown sausage. Drain and set aside in a bowl.

* Step 3

In same pan, cook bacon until almost crisp, drain and add all veggies and onions. Cook until soft.

* Step 4

If necessary drain any additional grease. Turn off heat and stir in sausage, seasonings and cream cheese until well combined.

* Step 5

In a large bowl whisk eggs until well mixed. Pour into a 13x9 casserole dish sprayed well with cooking spray.

* Step 6

Drop meat mixture into eggs by spoonfuls, spreading it out as you go so that it is well spread out and eggs are throughout also.

* Step 7

Cover tightly with foil and bake for 35 minutes.

* Step 8

Uncover and sprinkle shredded cheese on top and bake an additional 15-20 minutes or until eggs are set and cheese beginning to brown.

* Step 9

Let rest for about 5-10 minutes to cool. Serve with favorite toppings such as chopped tomatoes, sour cream, salsa. Enjoy!
