My Chic pea, and black bean Stuffed Sweet Potato. 😁

In this i have included Black beans, Chic Peas, Butter Beans , Avocado & Garlic mashed in Sour cream pulp. Adds a lovely flavour to the sweet potato finished with Goats cheese sprinkled on top. #lunch#Mixed #Beans #Worldpulseday

Cooking instructions

* Step 1

Cook the Sweet potato in the microwave

At the same time start boiling the black beans and lentils adding salt to the black beans, boil for 45 minutes. Then boil the butter beans and chic peas these are out of a tin so dont need to boil long.

* Step 3

Peel the 1/2 Avocado (wrap the other in cling film and keep in the fridge)and the garlic cloves crushed. Mash together then add the Sour cream and the goats cheese.add a little salt and pepper.

* Step 4

And mix again.when the butter beans and chic peas are cooked drain and leave in the pan then mash your avocado mix into the butter beans in the pan

Next when potatoes is cooked cut across the top down so you have 2 halves scoop out some of the mash but leave a little at the bottom Then add the soft potato to the Avocado mix and mash in.

Next drain the black beans and lentils add to the avocado mix and madh them all to a pulp. Add to the potato shells equally.

Add a few fruit, nut and seed mix to finish. Or just seed mix.
