Brussels Sprouts Salad

Brussels Sprouts Salad

A little bit different from your typical brussels sprouts dish. This is the vegan version of a dish we served at a restaurant I worked at in San Francisco called Zero Zero. The original dish had crispy pancetta.

Ingredient

1 splash

oil

2 sprigs

parsley

As needed

salt

Cooking instructions

* Step 1

Heat a cast iron skilet with a coat of oil over medium heat.

* Step 2

Nip the stem end off of each brussels sprout and slice in half through the stem.

* Step 3

Arrange brussels sprouts cut-face down on the hot skillet.

* Step 4

Peel and dice the asian pear.

* Step 5

Chop the parsley.

* Step 6

When the brussels sprouts are charred nicely, toss them in a bowl, add the parsley and pear, and season with salt and a lot of lemon juice.
