Lime-Processed Pickled Cucumbers
The use of pickling lime in this technique yields a firmer, crisper pickle.
Cooking instructions
* Step 2
Cut about 1/16" off the blossom end of each cucumber and discard.
* Step 3
Cut cucumbers into 1/4" slices.
* Step 4
Dissolve 1 cup pickling lime and 1/2 cup salt in 1 gallon water. in a 2- to 3-gallon crock or enamelware container. Avoid inhaling lime dust.
* Step 5
Soak cucumber slices in lime water for 12-24 hours, stirring occasionally. Remove from lime solution. Rinse, and soak for 1 hour in fresh cold water.
* Step 6
Repeat rinsing and soaking twice more.
* Step 7
Handle carefully, as cucumber slices will be brittle. Drain well.
