Couscous Salad (Clean)

I was doing some research on new clean eating recipes when I gave couscous a try. Needless to say; I'm hooked! added my own little twist on things and voilà! Enjoy!?

Ingredient

Food ration :

4 servings

Cooking time :

30 mins
2/3 cup

couscous

1/2 can

black olives

1/2 small

tomato

1/4 cup

black beans

1 tbsp

parsley

1 dash

pepper

Cooking instructions

* Step 1

Prepare couscous according to box. Usually bring water to a boil, pour in couscous and 1 TBSP olive oil and simmer, covered, for 15 minutes sirring occasionally or until tender.

* Step 2

Pour cooked and drained couscous into medium mixing bowl.

* Step 3

In medium pan, saute spinach, sliced tomato, mushrooms, 1 TBSP olive oil, and spices until tender.

* Step 4

Remove from heat. Mix into bowl of couscous.

* Step 5

Add black beans and sliced black olives.

* Step 6

Top with sliced avocado.

* Step 7

May serve warm or cool. Add more spices to taste.
