California Farm Fortified Sherry Wine
A fortified wine is a wine that has alcohol added. We make cooking wine from grape juice, measure the wine alcohol and add 50% grain alcohol to make a fortified wine.

2 weeks to make, Half a year to age.
Cooking instructions
* Step 1
Make 6 bottles of cooking wine from grape juice, 5 liters, check with Brix Meter to guess the alcohol in the cooking wine, ours was 12%.
* Step 2
Fortify the wine: add 1 bottle 50% grain alcohol to 6 bottles of 12% cooking wine, measure the alcohol with hydrometer. Should be 18%.
* Step 3
Add a pound of dry white oak wood to the wine in the pail. Age half a year in plastic pail with airlock. Or, age in oak wooden barrel. Fortified sherry wine will turn a rich deep golden brown color. Siphon into wine bottles with fresh corks. DO NOT REUSE SCREWCAP BOTTLES. Wine in reused screwcap wine bottles will spoil after a few weeks or months. Enjoy.
