Roasted shrimp scampi
Cooking instructions
* Step 2
On large baking sheet, toss zucchini with olive oil, salt and pepper. Arrange in even layer and roast 6 minutes
* Step 3
In a bowl, toss shrimp garlic, lemon juice and wine. Salt and pepper.
* Step 4
Remove baking sheet from oven and scatter shrimp over zucchini, drizzle with olive oil and feta. Return to oven and bake until shrimp is opaque, about 5 to 7 minutes.
