Cooking instructions
* Step 1
Heap flour on a clean kitchen counter or a kneading mat. Make a well and break in the eggs and salt. Gradually mix the flour into the well until a smooth dough is formed. Divide dough into 2 parts. Cover, and set aside wrapped in cling firm in the refrigerator for 20 minutes
* Step 2
In a pan over medium heat, heat olive oil and cook the ground chicken until evenly browned
* Step 3
In a bowl, mix the chicken, spinach, brown onion powder, garlic powder, melted butter, and salt
* Step 4
On a lightly floured surface, roll out the dough as thin as you can (if it’s easier, divide it into two equal parts and roll
each separately). Cut out an even number of 2 inch squares. Place a 1 teaspoon of the chicken mixture in the center of 1/2 the squares, and top with remaining squares, sealing the edges with a fork
* Step 5
Bring salted water to a boil in a large pot and cook the ravioli in small batches for about 8 minutes, or until al dente. Ravioli are cooked once they float easily unless rolled out very thick, making for dense ravioli. Drain and rinse under cold water to avoid sticking or just serve right away
* Step 6
Flavor some more by topping with pasta source or garlicky browned butter and a sprinkle or some Parmessian cheese
* Step 8
Roll and cut any leftover dough into preferred pasta shapes
