Japanese Spinach Salad (ほうれん草おひたし) Easy Recipe with Gluten Free Option

Japanese Spinach Salad is a relatively common Japanese side dish. It’s very easy to make with simple ingredients. Cooked spinach is soaked in marinde made of dashi, soy sauce, and mirin. The combination of umami from the dashi, saltiness from the soy sauce and sweetness from mirin gives the spinach that refreshing and light taste. Perfect to eat it by itself or accompany with other oily dishes such as karaage or tempura.

Ingredient

1 bunch

spinach

1/2 cup

dashi

1 tablespoon

mirin

1 pinch

salt

1 pinch

sugar

Cooking instructions

* Step 1

In a storage container add the following ingredients and mix well (dashi, mirin, soy sauce, salt and sugar).

Bring a pot of water to a boil.

Add spinach slowly and boil for about 10 seconds. Add the remaining leaves and continue to boil for a total of one minute.

Prepare a bowl of ice cold water, take out the spinach, dump them in the bowl of ice cold water, and leave in for about 5 minutes.

Squeeze as much water as possible out of the spinach, and cut to sections about 1-1/2 to 2 inches.

Add the cut up spinach to the pre made marinade and store in refrigerator for at least 30 minutes. The longer you store it the better it'll taste.

Take out before serving, add additional marinade, and sprinkle sesame seeds or katsuobushi according to your preference.
