Barley Risotto

Barley Risotto

I love risotto, and wanted to find a healthy substitute , so here it is. #mycookbook

Ingredient

Food ration :

4 servings
3 cups

water

2 cubes

butter

2 cloves

chopped garlic

300 g

mushrooms

200 g

spinach

20 g

thyme

Cooking instructions

* Step 1

Boil barley in water over high heat, after 1 boil keep it on slow for 20-25 mins or until done.

* Step 2

In a pan, take butter put garlic and cook until it starts to get golden from edges.

* Step 3

Add onions and cook for 2 mins

* Step 4

Put mushrooms and cook for couple of mins, add salt and pepper.

* Step 5

Add barley (once cooked) and stir, add spinach, stir gently & add herbs

* Step 6

If you like creamy you can add some white wine too and some cheese.

* Step 7

Shave parmesan cheese on top before serving
