Paya Soup (Mutton trotters)

#win #week2 Cold weather calls for hot paya soup! Here is my quick recipe of paya soup. It's a one pot soupy curry that can be enjoyed with pav, steamed rice or even baati!

Cooking instructions

* Step 1

Clean mutton trotters, pour hot water on them and let them soak for 15 minutes.

* Step 2

Discard water, rinse them again.

* Step 3

In a pan heat up ghee, add bay leaves and other whole garam masalas.

* Step 4

Add chopped ginger garlic followed by onions. Fry till they turn brown.

* Step 5

Add mutton trotters, salt and turmeric and fry on medium high heat. Add ginger garlic paste and 1 tbsp chopped coriander.

Add chilli powder, garam masala powder, tomatoes, followed by chilli powder, garam masala powder.

When tomatoes get soft, add yoghurt and kasuri methi.

* Step 8

Add around 2 liters of hot water and combine well. Transfer it in the pressure cooker.

* Step 9

Let it cook in slow flame at least for 1 hour or till the flush starts separating from the bones. Add crushed pepper corn.

* Step 10

Serve it piping hot after adding some lemon juice and coriander leaves.
