Niçoise salad sandwiches

What is a Niçoise salad? This is a specialty from Nice, France. It is a layered salad with green beans, tuna, tomatoes, olives, and hard boiled eggs, we turned this classic into a to-go lunch by packing the ingredients into soft, fluffy pita bread.

Cooking instructions

* Step 1

Steam green beans or cook in boiling water 4-5 mins or just until crisp-tender, give an ice bath, them strain

* Step 2

Place a leaf on each pita round, arrange green beans on lettuce, top with tuna, tomato, onion, and egg slices. Drizzle with parsley gremolata vinaigrette. Fold and serve

* Step 3

Parsley Gremolata Vinaigrette: in a mason jar combine 1/4 C. White wine vinegar, 1/4 C. Olive oil, 2 tbsp. Dijon mustard, 2 garlic cloves, minced; 1/2 tsp lemon zest salt pepper, cover and shake well
