Andean Herbs Chili Sauce
The Andes is home for some amazing herbs. Some of them, very strong flavored, others with a much more subtle flavor. This time we used Huacatay. This herb has an amazing strong flavor and is regularly found in neighborhood markets all around Peru.
Cooking instructions
* Step 1
Wash the Huacatay Leaves with plenty of water and separate the stems.
* Step 2
Cut the Onion as shown in the picture.
* Step 3
Cut the Lime and extract the juice.
* Step 4
Cut the Chili as shown in the picture. If you want the Sauce spicy, add the seeds and veins to the blender. If not, just the yellow part.
* Step 5
Cut the Garlic Cloves in halves.
* Step 6
Put everything on a wok along with the Oil and Salt to taste. Cook it for 10 min at medium heat.
* Step 7
Add everything to the blender and blend.
