Peruvian BBQ Ribs

There are many BBQ recipes, here we show the one we like the most, with a Peruvian twist. Amazonian chili has a special flavour, if you are into spicy food and specially chili, you need to try this recipe.

Ingredient

Food ration :

6 people
2 pounds

Pork Rib Rack

1/2 cup

Ketchup

2 Tablespoons

Ginger Powder

2 Tablespoons

Cayenne Pepper

3 Tablespoons

Onion Powder

10 Cloves

Garlic

2 Tablespoons

Honey

5 tablespoons

Amazonian Chili

1/2 Cup

Vinegar

Cooking instructions

* Step 1

Wash the ribs with water before starting. Lay them on a tray, add salt and place them in the refrigerator while you prepapre the BBQ Sauce.

Put the ketchup, ginger powder, onion powder and cayenne pepper into a bowl and mix them.

Add the amazonian chili into the mix.

Put the garlic cloves and a little water into a blender and process them. You can also buy the garlic paste already made at the supermarket.

Add the garlic paste, honey, and vinegar into the mix prepared on the second step and mix everything.

Cook the mix at low heat for 10 min. Now you have your Peruvian Style BBQ Sauce!

Pour the BBQ sauce on the ribs and let them rest for at least 1 hour inside the fridge. If you have enough time to let it rest from one day to the other, much better.

Light the charcoal. It is important to cook the ribs when most of he charcoal is already white. This way the heat is going to spread evenly, you will avoid gettting flames and your ribs will not burn. If you are using a gas grill, then set it at low heat.

Grill the ribs until the grease turns into a crispy crust.
