Red Curry Soup

This is a soup recipe that I made up.

Cooking instructions

* Step 1

Rough chop the lemon grass, garlic and ginger.

* Step 2

In a sauce pan combine the chicken stock, lemongrass, garlic and ginger. Simmer for around 30 minutes.

* Step 3

While simmering the broth, chop the chicken into small cubes. Cook the chicken in a large skillet until the chicken turns opaque.

* Step 4

Add the curry paste and the lime leaves to the chicken. Cook until it is aromatic.

* Step 5

Add the lime juice and fish sauce to the chicken. Mix well. *the fish sauce is your salt.

* Step 6

Strain the stock and add it to the chicken.

* Step 7

Add 2 cans of coconut milk.

* Step 8

Simmer 15 minutes.

* Step 9

Add the sliced onion and simmer until the onions are soft.

* Step 10

Add the cilantro and serve.

* Step 11

Can be served over rice or eaten as soup.
