Cooking instructions

* Step 1

Put the oil in a sauce pan and add the flour and salt. Blend well. Add the green pepper, onions, mushroom and stock with cubes. Allow to simmer.

* Step 2

Remove the thin membrane from kidney. Dice into cubes. Stir into the hot sauce and cook while stiring for five min.

* Step 3

Place kidney sauce on a bed of rice. Just before serving pour brandy onto kidneys and light.

* Step 4

Carry to the table flaming.
