California Farm Aquafaba Soup Dinner
Aqua Faba means bean water and is the nourishing thick broth from soaking and cooking dried garbanzo and other beans. It is often thrown away because the foam on top has a bitter taste. We skim the bitter foam off and use the broth, it tastes mild like egg whites in egg drop soups.
There is also a fava bean called Aqua Dulce, which is not bitter when soaked and cooked, that can be used with or instead of garbanzo beans.
We mixed both beans to make a hearty bean soup dinner served over croutons with poached egg yokes, spiced with harissa sauce and other spices, served with side dishes of pickled cucumber, pickled onions, pickled olives, pickles sweet peppers and chopped cilantro and green onions.
If you prefer vegan, you whisk the aqua faba broth till it develops white strings, like eggwhites, use in this soup instead of eggs.

2 people, 4 cups

Overnight soak, 2 hour boil and simmer
Cooking instructions
* Step 1
Soak 1/2 cup dried garbanzo beans overnight and 1/2 cup favabeans in 4 cups of water. Next morning, add 2 cups water to submerge beans, bring beans to boil.
* Step 2
Boil half an hour on high. Add two more cups of water. Bring back to boil, skim, then on low, skim every half hour till no more foam develops. Pour skimmed cloudy aqua faba in bowl and whisk.
* Step 3
Mix cumin, garlic, caraway, harissa, salt in food processor with aqua faba, whisk, then add to the beans. Simmer till done. Beans are done when beans feel soft. About an hour.
* Step 4
When done, turn heat off. Make indentations in beans in broth to place crackoed eggs for poaching, poach 5-10 minutes, ready when egg whites are solid.
* Step 5
Put half a cup of croutons in soup bowl, beans on top, egg yoke on top, pour broth over, serve with side dishes and wedges of lime. Nutritious, big, filling dinner.
