Pad Thai or Phad Thai or Phat Thai is a stir fried Rice Noodle dish commonly served as a streetfood in Thailand as part of the Country's cuisine.
It is typically made with Rice Noodle stir fry with a sweet savoury sour sauce and scattered with crushed Peanuts. It has Chives, Tofu, Sprouts, Shrimps or Prawns or Chicken.
It is the national dish of Thailand and hence cannot play with the ingredients. It has to be precise. I have used some boneless Fish for topping just because I had no other Non-Veg handy. Other than that I have kept it as authentic as possible.

Cooking instructions
* Step 1
Noodles:
Cook noodles according to package instructions until tender. Rinse under cold water. Set aside.
* Step 2
Pad Thai Sauce:
The sauce here is quite simple. It has just 3 ingredients. Melt palm sugar in a pan. Add soy sauce and stir for about 5 minutes and then add the tamarind paste. Stir for another 5 minutes and take it off. It gets thick in consistency. It can be stored in the refrigerator for a Month.
* Step 3
Heat some olive oil in a large wok over medium-high heat. Add the boneless fish. Shallow fry and set aside. To the same pan, saute chopped garlic and leeks or chives or red onions. Add soy sauce, red chilli oil, salt and pepper. Now add the sauce. And finally the cooked noodles. Give it all a good mix.
* Step 4
Push everything to the side of the pan. Add a little more oil and add the beaten eggs. Scramble the eggs, breaking them into small pieces with a spatula as they cook.
* Step 5
Mix again and sprinkle with crushed peanuts (reserving some peanuts for topping at the end). Toss everything to combine.
* Step 6
Garnish with chopped leeks, extra crushed peanuts, boneless fish, coriander or parsley. Serve it piping hot immediately. Enjoy!
