Udon Noodles are thick Japanese Wheat flour Noodles. In this particular version, iam doing it with a lot of mixed Vegetables that were handy.
With Soy Sauce, Garlic and Vegetables, it's absolutely flavourful and aromatic. It also completes the meal. It's actually a one pot meal with everything in one place.
Though it's made with Chicken, Shrimps etc, this one is purely Vegetarian.

Cooking instructions
* Step 1
Boil Udon Noodles on a high heat for about 2-3 minutes. Drain and set aside until use.
* Step 2
Heat oil in a cooking pot or a kadai. Saute chopped leeks or spring onions and garlic. When aromatic, add the mixed veggies. Also add a handful of mixed sprouts. Stir fry on a medium high heat. When softened, add soy sauce and pepper.
* Step 3
Also add the boiled noodles. Mix well. Season with salt and pepper as required. Dish out and enjoy. Yum!
