Shrikhand is a famous Dessert in India and there is no one who will dislike it. Iam sure about that. It's made on Festivals as well as many important occasions in many a households.
And there are umpteen variations of this creamy Dessert. In this particular one, iam using pureed Pumpkin. And this was the most loved childhood recipe of mine.
My mom made this every weekend for me and now I do the same for my little one's.
Nothing fancy needed at all. Just a few simple ingredients and you are all ready to enjoy it.
Creamy and melt in mouth Roohafza Shrikhand is all yours. The best part about this is that you need not add only Sugar to it. One can add Honey as well. Or even Jaggery for a lovely change. I have used Disco Pumpkin in this variation. You can use Green or Yellow one's too.

Cooking instructions
* Step 1
Tie up the thick homemade curd in a clean cotton cloth or a cheesecloth placed in a strainer kept with a bowl underneath it to collect the whey. Refrigerate it for a day.
* Step 2
Cut pumpkin into pieces. Remove the skin and the seeds. Steam for 15 minutes or just until it softens. Blend into a puree adding the powdered sugar. Set aside until use. Keep refrigerated.
* Step 3
After the curd sets and the shrikhand is ready, mix in all the ingredients in a bowl. Adjust sugar if needed. Also top with slivered dry fruits and nuts of choice or as it is.
* Step 4
Don't forget to add a pinch of cardamom powder for the authentic taste and flavour. Enjoy!
* Step 5
Serve it super chilled. Yum! Enjoy!
