New Delhi Red Carrots or Laal Gaajar Raita or Dip is very much Indian. It's zingy, it's peppy and above all absolutely flavourful and aromatic.
This Raita is a great option on any day at mealtimes or as a healthy snack, Brunch idea or even as a lovely Dip alongside Pakoras or Fritters, Bhajiye, Chaats etc. I has served it at Iftaar meals with Punugulu or Black Gram Fritters also called as Maash ke Bhajiye in Hyderabad very famously relished during Ramadan while breaking the day long fast.
It's simple and easy. It does not require any fancy ingredients too. Homemade Curd would be awesome if you have an access to or else any good brand of store bought one's also would suffice.

Cooking instructions
* Step 1
This is a no cook recipe. And takes around 10-12 minutes in bringing up everything together.
* Step 2
Add all the ingredients to a serving bowl directly. Adjust the seasoning as needed.
* Step 3
Mix well and garnish with cumin and red chilli powders. That's it. Enjoy!
