Cucumber and Lettuce Soup is a perfect choice for a healthy and a soulful Dinner on any day. The best part is that it can be relished both warm and chilled. That's the beauty of this versatile Soup. Creamy, velvety and luscious to the last sip. It's always a delight at the table. It's always welcomed in my family and they just love it to the core. I have used Romaine Lettuce and English Cucumber in this Soup.

Cooking instructions
* Step 1
Keep all the ingredients handy. Wash and peel cucumber. Later chop it to small pieces. Set aside. Similarly wash the lettuce leaves thoroughly to get rid of the sand and dirt. Tear it roughly into 3 or 4 pieces.
* Step 2
Meanwhile heat olive oil in a pan. Add chopped garlic and shallots. Saute until the raw smell fades away and it's translucent preferably on a low heat. Next add both cucumber and lettuce one by one. Saute on a low heat. Cook for 4-5 minutes.
* Step 3
Add the other ingredients too. Paprika or cayenne or red chilli flakes can be used. It's absolutely one's own choice. Or even black pepper can be used.
* Step 4
Blend until smooth and velvety. Use milk while blending. Add it back to the pan for a single boil. Garnish with chilli flakes and a few pieces of cucumber.
* Step 5
Serve it warm or chilled. Enjoy!
