Tamatar Bharta or fire roasted Tomatoes to give it a smoky effect is a simple side dish that is the best on any day. Not only is it delicious, it is absolutely a bliss. Grilling the Tomatoes and the Onions on charcoal or direct fire infuses the dish with a smoky flavour. A must have in this Season when fresh and healthy Vegetables are available aplenty in the markets throughout the Country. Therefore I too have made it and relished it with my folks so many times with a different variation each time. This one here is the most commonly made dish.

Cooking instructions
* Step 1
Rub some oil on the onions all over along with tomatoes and chillies too. Roast on a low heat directly on the gas. Keep turning them at regular intervals so that they get roasted well on all the sides. After done, allow them to cool.
* Step 2
Peel the skin of the vegetables. Mash them and do not forget to mix in the finely chopped chillies. They are optional. You might skip them and add just the red chilli powder.
* Step 3
Also stir in the powdered spices. Mix well and cook just for about 2-3 minutes until it's nicely heated and done. Garnish with chopped coriander leaves and it's perfectly done.
* Step 4
Serve at mealtimes alongside steaming hot plate of simple boiled Rice. Enjoy!
