Fresh Red Chilli Oil

#cookpadindia #easy #condiment Chilli Oil is a Condiment made from Vegetable oil that has been infused with Red Chillies or Chilli flakes or both and also Green Chillies or Peppers too. In this particular one, I have used just fresh Red Chillies available aplenty nowadays throughout the markets in the Country. I have not used any other Pepper. Chilli Oil is commonly used in Southeast Asian cuisines, Chinese cuisines and elsewhere too. This is used with any neutral oil, like Peanut oil but also works absolutely fine with Olive oil too. I have used Rice bran oil in this recipe that iam sharing here. Chilli oil usually adds a touch of spice without being too fiery. It is largely used for Pastas, Noodles etc. It's used as Condiment to dip in or drizzle over Salads, Soups, Braises, Grilled Red Meats and Vegetables too. It contains an antioxidant called Capsaicin that neutralizes free radicals in the body and lowers the risk of chronic diseases. Chilli Oil also has Vitamin C which stimulates the Immune system. It has expectorant and decongestant properties too which can clear up Sinus congestion. It also is a good source of Protein and rich in Vitamins like A, E, D and K. But like with any other food, over consumption can lead to adverse effects. So be careful about that and have it in controlled amounts.

Cooking instructions

* Step 1

Add oil to a deep fry pan. Heat on a low flame. Add all the whole spices now. Let it heat up slowly thereby infusing the flavours of the spices being added.

It takes a good 10-15 minutes. Meanwhile wash and dry the fresh red chillies in the open until they are dry and free of any moisture. You can dehydrate them or even dry them under the sun a day before also if desired. I just dried them under the fan spread out on a wide plate for about 3-4 hours.

* Step 3

Make a paste of the red chillies now. Discard all of the spices that have been added to the oil. In the meantime grind and make a paste of the fresh red chillies. Add this to a pan and dry roast for a while before pouring the hot oil.

* Step 4

After 3-4 minutes, pour hot oil on it and mix well. That's it. Allow it to cool down before storing in a clean sterilised jar. That's it. Refrigerate it for a long time storage for months together. It stays good for a real long long time. Use it as desired. Enjoy!
