Moroccan Msemen

#cookpadindia #Morocco #flatbread Moroccan Msemen is a delicious square shaped flatbread that is traditionally enjoyed for Breakfast with a cup of Green Mint Tea. It is buttery, flaky and so light. That's Msemen for you. These are just like our very own Parathas. Semolina is used in this for giving that perfect crunch and crispness to the final texture of the flatbread. Though it can be enjoyed on it's own with just a hot cup of Green Mint Tea. This is enjoyed alongside other accompaniments also like Jam, Honey or Butter too. However it is enjoyed, it is absolutely delicious and delightful to the last bite. Flaky, buttery and melt in mouth flatbreads are a treat to our tastebuds. Everyone would love to have these super light and buttery flatbread.

Ingredient

5-6 servings

Cooking time :

40 minutes

1/4 tsp

Yeast

1/2 cup

Oil

1/2 cup

Butter

Cooking instructions

* Step 1

Make a smooth yet a pliable dough using all the first 6 ingredients. Knead until soft and supple. Cover and set aside.

Divide the dough into equal sized balls before that. After about 30 minutes, start shaping the dough. Do not roll. Take a ball. Start shaping with hands into an irregular square. The shape actually doesn't matter. Just like a laccha paratha, you need to fold it so that the layers are seen. But these are square shaped so fold them as needed. Before that apply some butter and sprinkle a little semolina.

First fold one side of the dough into the centre. Now fold opposite side into the centre to make a narrow strip of dough. Then fold one strip of the dough to the centre. Now fold the opposite end of the dough to the centre so that we get a square shaped dough. Make all in the similar fashion. Cover them all so that they don't dry up.

Heat a skillet or a griddle. Now shape each square with your palms and roast on the hot griddle using butter. It takes a little time and effort. Do them on a low heat and cook well so that they don't remain raw or uncooked in the centre. It needs a little patience just like our own Parathas.

* Step 5

Stack them in a casserole to keep them warm. Serve hot with mint tea. These can be enjoyed with butter, jam, honey etc. Yum!
