Blue Ghee Rice with Pine nuts

It's a beautiful twist to the simple Rice dish with the use of Butterfly Pea flower by me. There is one more added attraction. Dry fruits like Pine nuts are used by me to make it more appealing. Easy to prepare even with cooked rice or leftovers too. It's a hassle free Rice recipe that can be whipped up anytime you feel like having something different. Any side dish of your choice can be served along with this, either Vegetable or Non-vegetable. Ghee Rice is always a best choice for any party or an occasion. It's also great for Tiffin box idea too. An ideal option when it comes to Rice, it's simply irresistible.

Pine nuts

Cooking instructions

* Step 1

Soak butterfly pea flowers about a handful in clean drinking water for 30 minutes.

* Step 2

Soak rice in enough water for about 20 minutes. Boil water as required in a cooking pot with butterfly pea flower soaked water. Bring it to a rolling boil on a high heat at first. Discard the flowers. Now add drained rice to the pot. Cook it al dente. Set aside.

Heat ghee and fry pine nuts for a minute on a low to medium high heat until light brown in colour.

Add it to the cooked rice. Fluff it up gently so that everything gets incorporated into it really well. That's all. Yummy and beautiful looking blue rice with fried pine nuts in ghee is all ready to be served hot.

Serve it hot with pickle, raita and poppadums. Enjoy!
