This simple fry is way too flavourful and aromatic with that amazing flavour of freshly grated Coconut or Dessicated Dry Coconut.
An easy one pot dish for any day by me made in a pan that too in a jiffy. This Vegetarian dish can be relished with both Rice and Rotis. Made with easily available pantry staples, this is one of the most simplest dish too. Almost every Week, I do make it a point to go with one for mealtimes especially on a Weekend or even for the Lunchbox.

Cooking instructions
* Step 1
Peel the outer layers of the stem until the time you are not able to peel any more. Discard the outer hard covers that are not one or two but more than that. Keep on removing those hard covers until you find the tender part of it.
Take this inner tender part of the stem. Cut it into discs. You will observe that thread like fiber starts sticking to the knife. Using your fingers, discard the thread that comes in between the discs.
* Step 2
Now chop them finely and keep them soaked in diluted buttermilk water to avoid discolouration.
* Step 3
In a pan, heat some oil and add the ginger garlic green chilli paste. Saute it for a few seconds and then add in the cumin seeds and red dry chillies as well. Plus the shallots too.
Saute all of that for 2-3 minutes and then finally add in the cubed banana stem.
* Step 4
Also add all the powdered spices too. Cover and cook on a low flame for 18-20 minutes. Do not add too much of water. Add a little to facilitate easy cooking of them. It will be done easily. It is done in about 20 to 25 minutes in all.
* Step 5
Relish this awesome dish well garnished with grated or dessicated coconut and serve hot as a delicious side dish to many an important meals. Yum!
