An absolutely lovely treat that one can take for a picnic or an outing with family or friends. This one is an easy one and also is a meal in itself that is filling as well. I have used Tomatoes, Red and Green Bell Peppers, Green Peas in this one that were handy. And of course not to forget the star addition which is the Tofu or the Soya Paneer. You can definitely use any of your favourite vegetables to make it more appealing and healthy.
Not only that, it's quite simple yet filling and wholesome too. It's a great option for everyday cooking.
A great one for Lunchbox too. This will be loved by all. Both roasted and plain one's are equally delightful. With the addition of Vegetables, Paneer, Tofu, Chicken etc, this can be given a totally new look and appeal without any compromise on the taste and flavour.

Cooking instructions
* Step 1
Heat oil in a Kadai. Add ginger garlic green chilli paste at first. Now add chopped onions. Saute for a few minutes and then add the tomatoes. Saute until mushy along with the powdered spices as mentioned. Now add the vegetables of your choice.
* Step 2
Saute all on a low heat until crisp and done. The tomatoes should be ripe so that they taste good. And also add half of the salt. Mix well and now add the tofu or soya paneer. Saute all that really well. Cover and cook just for about 2-3 more minutes.
* Step 3
And then finally add the roasted vermicelli. If you are using a plain one, roast it before adding. It gives a nice crunch. Mine is a roasted one. Mix well. Saute for a minute or two before adding water. Mix everything well. Add chopped coriander leaves and also the remaining half of salt.
* Step 4
Bring it to a rolling boil at first on a high heat. As soon as it starts boiling vigorously, lower the heat and cover. Keep checking in between once or twice and gently fluff up in order to prevent it from sticking to the bottom or getting burnt. Add water accordingly. Do not add all at once. Otherwise, it tends to get too soft or mushy.
* Step 5
And finally, before dishing out this awesome dish, fluff up gently once more and serve hot immediately. It tastes yum on it's own. That's the beauty of it. However, I had served it with boiled eggs Enjoy!
