Til Suji and Gud Laddoos

#Feb#Week1 #cookpadindia #innovative In this particular version of the Laddoos, i have used both the White and Black Sesame Seeds. Til means Sesame Seeds, Suji means Semolina and Gud refers to Jaggery. Basically these are instantly done Laddoos made with just a few ingredients in all. These are essentially consumed in Winters as they keep us warm. Healthy and guilt free indulgence is what I call them and not only these can be made and relished at anytime but Winters hold a special relevance because these are warm in nature and helps keep Winters at bay. These are particularly part of festivities too here in the Country. Whatever be the reason and occasion, these are an instant hit with children and the adults alike.

Ingredient

Food ration :

25-30 minutes
1 cup

Jaggery

1/2 cup

White Sesame

1/2 cup

Black Sesame

Cooking instructions

* Step 1

Firstly, it's important to roast the sesame seeds on a low heat just for about 2-3 minutes. Don't forget to stir it every now and then. Also keep a watchful eye on it so that it doesn't get burnt. If not, the taste will be awful. Burnt smell is too irritating. Right guys! So do it on a low heat while keeping an eye on it until done. Similar is the case with Semolina or Suji too. Roast until it smells good and changes it's colour to a light brown.

* Step 2

Meanwhile add jaggery and a little of water to a heated up pan. Cook on a low heat until it starts melting. As soon as it bubbles and becomes frothy and sticky, boil it for 2-3 minutes and add both the seeds and the semolina. Mix well vigorously. See to it that the seeds are nicely coated with the syrup.

* Step 3

Mix well and add ghee. As soon as the mixture comes together and starts leaving the sides of the pan, take it off the heat. Also add the cardamom powder and the mixed nuts too. Spread on a plate and allow to cool down before proceeding with the next step of shaping the laddoos. This is important as the semolina absorbs the syrup well and is ready to be shaped into laddoos

As soon as the mix is ready to be handled and mildly hot, shape into laddoos of your choice. Enjoy!
