Aloo Baingan Sabzi

A simple Sabzi or a Curry with Potatoes, Tomatoes and Brinjals. It goes well alongside many an important meals. It can be relished with both Rice and Rotis.
Not only is it a simple one but also an easily done dish as well.

Cooking instructions
* Step 1
Wash and cut the Brinjals lengthwise or in cubes. Keep these immersed in salted water until ready to use.
* Step 2
In a pan, heat Oil and add Black Mustard Seeds along with a pinch of Asafoetida or Hing. Let them a crackle and then saute the Onions in it until translucent. Now add the spices followed by the chopped Tomatoes. Cover and cook until soft and mushy. After about 7-8 minutes of cooking, add Brinjals.
* Step 3
Cover and simmer after adding just about 1 cup of water on a low heat. It is ready in about 18-20 minutes. In between, check it at regular intervals. They should be tender and soft with most of the water dried. That's the right time to take it off the heat. It's a dry Sabzi. So saute it well. But take care not to over do it. It should have a nice semi dry Sabzi due to the presence of Onions.
* Step 4
Adjust Salt according to taste. Garnish with chopped Coriander Leaves and serve hot. Yum !
