This is an amazing Indian dish suitable for any main course meal. Be it a Lunch or a Dinner. It goes well with both Phulkas or Chapatis and Rice. Cauliflower is one such versatile Veggie that gets easily blended with other Veggies like Carrots, Capsicums, Potatoes, Tomatoes, etc. Mix them and whip up a fantastic dish. That is what I have done here. Along with Onions, I have also used Tomatoes. With a few pantry staples, it's a perfect side dish for simple family meals.
You can also try your own combination of Vegetables and make this. Enjoy your mealtimes with your loved ones and just about anyone you would want to spend your time with. It can be made in a jiffy. So it's actually a friendly dish. Helps you out when you have less time at your disposal.

Cooking instructions
* Step 1
Heat oil in a Kadai. Add Asafoetida and Bay Leaves at first. Now add the chopped Onions along with all the ingredients including the Tomatoes except the Cauliflower florets.
* Step 2
Saute all of that for about 5-6 minutes or until soft and mushy. Then add the cauliflower florets. Mix well and cook on low heat until done. Do not add much water. Just sprinkle a little on it if required. Also, add in chopped Coriander Leaves. Also, adjust Salt. Mix well and cover with a lid.
* Step 3
It doesn't take long to cook. It gets done very quickly too. Also, one important thing to take note of is that the crunch of Cauliflower should be maintained. That's it. As simple as that. Delicious and absolutely beautiful with a bowl of steaming White Rice. Enjoy!
