#Holi2022 Holi 2022 is around the corner and make this holi colorful with this simple, easy to make and delicious barfi recipe made using bottle gourd, milk, sugar and khoya. For the flavoring cardamom powder is added. These sweets need less sugar and are unique too.

Ingredient

Cooking instructions

* Step 1

Boil the milk in a deep bottom pan and reduce till thick. Add milkmaid and start boiling again

* Step 2

Make sure you peel and keep the lauki in chilled water and also grate it directly into chilled water. This way it won’t turn brown. Meanwhile soak the grated bottle gourd in water for 5 minutes. Now squeeze the water and gradually add the lauki (bottle gourd) and keep stirring.

Now add 150 gms khoya kheer and keep stirring the mixture. Cook them together on high heat till milk reduces to ¼th.

Add sugar to taste and cardamom powder. Keep cooking till all of the liquid is absorbed and the lauki comes together.

* Step 5

Now divide into three portions and mix food color. Lightly grease three glass container with the ghee on all sides. Remove the lauki barfi from the heat and pour into the mould. Spread and press it down together. Sprinkle with chopped pistachios. Let it cool completely and then refrigerate it for at least an hour. Cut it into squares, remove and serve it on to a platter.
