A typical category of Bengali dishes involve boiling/steaming vegetables, leafy greens, and even certain kinds of fish, and then mashing them by hand with some sharp flavours derived perhaps from onions, garlic and chillies. This category is called the ‘bhorta’, and is admittedly more popular within the Bangladeshi branches of Bengali cooking than it is within the West Bengal ones. Aloo Bhorta is simple mash of potatoes, onions, garlic, and chillies and easiest and tastiest side dish served with rice for lunch. Masoor daal Bhorta is prepared by combining boiled Masoor dal (Red Lentils) with raw Onions, green Chillies and Mustard oil.

* Step 1
For aloo Bhorta
Boil and peel potatoes. Mash them until lump-free, along with the salt and 1 tsp of the mustard oil. Slice the onions, garlic, and green chillies, dry red chillies. Now add mustard oil in a kadai and light fry the onions and others and then using your fingertips, rub in the fried dried-red chillies into a small amount of the potatoes. Once the chillies are mixed well, mash in the fried onion mixture too and make small balls and enjoy with rice.

For Masoor Dal Bhorta
Put the dal into a pressure cooker
add water, Garlic and close the lid and pressure cook for 4 minutes. Open the lid and cook it in medium high flame until extra water evaporates. Stir occasionally.Switch off the flame and let the dal cool off.Take the chopped Onion and green Chillies, garlic on a plate and add mustard oil, mix well and make round balls and enjoy with rice.
