Quinoa Fruit Salad

Quinoa Fruit Salad is a bright gluten-free healthy summer salad with seasonal fruits such as mangos, apricots, and blueberries tossed with quinoa, citrus honey-lime dressing, and some black salt. The fruits can be of your choice which you want to include in your diet. Protein-packed quinoa keeps you feeling fuller longer and the little nutty taste gives this salad a fun texture. The fruits used in this salad recipe has many nutritional facts:
*Packed with vitamins and minerals, kiwi is one of the most nutritionally dense fruits.
*An apple’s fiber can also help with diarrhea and constipation. *Pomegranate also being a colorful, delicious fruit packed with a powerful antioxidant punch.
*Babugosha has been used as herbal fruit in Ayurveda. It is believed to cure many diseases and a good source of fiber and controls blood pressure.

Cooking instructions
* Step 1
Wash several times and prepare the quinoa. Boil with 2 cups water and cook till it's fluffy(check with a fork) and strain in a colander and keep aside.
* Step 2
Transfer to a bowl and add finely cut apple, pear, kiwi and add the pomegranate seeds. In a bowl add 1/2 tsp honey and mix the lemon juice squeezed from the sweet lime slice(you may use lemon also). Now mix the dressing with a pinch of black salt. Adjust the honey and lime quantity as per your choice of taste.
* Step 3
Toss and chill for 5 minutes in the fridge and have immediately as I have used apples and pears which tend to oxidize very quickly.
