Easy "brinner" (breakfast for dinner) french toast and bacon
I had a load of sourdough that had gone ROCK SOILD as it was a few days old. I didn't want to waste it so I used a pretty cool trick to make it useable again before making this yummy french toast.

* Step 1
Slice your bread into thick slices. (I had a sourdough that had gone really hard to I refreshed it using my easy oven method here:
* Step 2
Mix together your eggs and double cream. Sprinkle in a pinch of cinnamon to taste and mix well. Add your bread to the mixture turning it over and allowing it to sit to absorb the liquid. Whilst this is soaking, heat a little oil in a frying pan to really hot.
* Step 3
Add your soaked bread to the hot pan and turn it over when once the bottom side is golden. Just before turning you can gently pour any access eggy mixture on the top side so nothing is wasted.
* Step 4
If you have ends or leftover slices of bread that you don't want to throw away do as I did and cut the remaining parts into cubes, place them in a freezer bag and store them in the freezer to use another time to make crispy croutons or breadcrumbs for soups or salads.
