Mango Semolina Cake

Mango semolina cake is an easy cake to prepare. This cake is so aromatic with its delicious mango flavor. Mango pulp, semolina, cardamom, and few handful nuts gives a perfect cake to bake in mango season.

Cooking instructions
* Step 1
First of all prepare mango puree. Cut the mangoes and extract the pulp. Just blend for 30 seconds. It should be a smooth consistency.
* Step 2
Chop nuts and keep them aside.
* Step 3
Mix the dry ingredients like semolina or sooji, baking powder, chopped nuts, very well.
* Step 4
In another bowl add mango puree, milkmaid, mango essence, curd and oil. Mix them well. I have mixed them in mixer by churning.
* Step 5
Now add dry ingredients to wet ingredients and combine them well, there should not be any lump. Keep this batter for 20 minutes.
* Step 6
Meanwhile, preheat the oven at 180C. Or place salt in heavy bottomed karahi and place a stand. Then place baking dish over it and cover. Baje it for 40 minutes.
* Step 7
Grease a baking pan and pour this batter. Garnish with some chopped nuts on the top and bake for 30-40 minutes.
* Step 8
Check after 25 minutes, insert a knife. If it comes out clean then remove the pan immediately. Baking for longer will make this cake harden from the top.
* Step 9
Cut pieces and serve. It can be presented for 1p days in refrigerator.
