#Simple potato stir fry made in mustard oil and flavored with cumin seeds, ginger and turmeric. This Aloo Bhujia is very popular stir fry in states of Bihar and eastern Uttar Pradesh in India!

Cooking instructions
* Step 1
Peel and chop boiled potatoes in small pieces.
* Step 2
Grate tomato and make puree. Grate ginger.
* Step 3
Heat oil in a wok. Add cumin seeds and when cumin seeds splutter put pureed tomatoes and grated ginger and saute till oil leaves the sides. Now add all dry masale and mix and saute for 1 minute.
* Step 4
Add chopped potatoes and mix well and saute for 2 minutes.
* Step 5
Add chopped coriander leaves and garam masala and mix well. Saute for 30 seconds and switch off the flame.
* Step 6
Serve this potato bhurji with paratha or with meal as side dish.
