Spinach Corn Curry

Palak corn curry is a rich, saucy dish that’s made with fresh spinach and sweet corn. It is lightly spiced and perfectly creamy, and great to pair with chapatti or rice or parantha.

Cooking instructions
* Step 1
Wash and blanch spinach first in boiling water for 2-3 minutes. Then in ice cold water for 2-3 minutes. Than transfer it in a colander and aloo to remove extra water.
* Step 2
Now grind it coarsely in a mixer on pulse mode for 30 seconds twice.
* Step 3
Now peel, Wash and chop onions and ginger. Grate tomatoes.
* Step 4
Heat butter and cooking Oil in a heavy bottomed karahi. Add cumin seeds and when cumin seeds splutter put finely chopped onions and ginger and saute till it turn pinkish.
* Step 5
Now add grated tomato puree and all dry masale ingredients and mix well. Cook till oil leaves the karahi.
* Step 6
Now add grinded spinach paste and cook on low flame for 5 minutes. Add 1/2 bowl water and cook till it simmer.
* Step 7
Boil sweet corn in 2 bowls of water for 5 minutes.
* Step 8
Now add boiled sweet corn and mix well and cook again for 5 minutes. In the end mix garam masala.
* Step 9
Serve hot with chapatti or parantha or rice.
