#Holi21 #Kanji is a popular digestive drink. In North India it is made during festivals specially holi. It is a healthy drink and good after a heavy meal.

Ingredient

Food ration :

10-12 servings

Cooking time :

5 minutes
2 litre

water

as per taste

salt

1 pinch

asafoetida

Cooking instructions

* Step 1

Wash, peel and chop black carrots.

* Step 2

Boil 2 litres of water.

* Step 3

In a jar add chopped carrots, black salt, salt, black pepper powder, rye, asafoetida and mix.

* Step 4

Add boiling water on it. Water will turn reddish purple. Keep it in sun covered with white cloth on the mouth of jar for 3 days.

Delicious kanji is ready to serve.
