#This is an easy recipe for Carrot Laddoo that I make frequently for my kids at home. Carrots are good source of carotene and vitamin A. I make sure to make carrot recipes for kids due to its nutritional value in winters.

Cooking instructions
* Step 1
Wash, peel and grate carrots.
* Step 2
Heat 2 tbsp pure ghee in a heavy-bottomed karahi. Add grated carrots and cook on medium flame till water gest evaporated from carrots.
* Step 3
Add milk and stir and cook on low flame till milk is absorbed in carrots. Now add sugar, milk powder, desiccated coconut powder and coarsely ground Green cardamom and mix and cook on low flame till sugar is melted and mix in Carrots. It may take 8-10 minutes. Now add the remaining 1 tbsp ghee and roast the mixture till ghee separates from the mixture.
* Step 4
Now add all chopped dry fruits and mix mis well and cook on low flame for 2 minutes. Switch off the flame. Let this mixture cool to room temperature.
* Step 5
Now take a portion of mixture and make a ball with the help of your hands. Like wise make all the laddoos. Garnish the laddo with Cashew nuts and serve.
