Bharta Eggplant grilled minced and roasted with spices

Cooking instructions
* Step 1
Wash and grease eggplant with oil on open flame till it is completely soft, skin charred and peels off.
* Step 2
Allow it to cool, peel off the skin.
* Step 3
Mash the pulp with spoon or fork.
* Step 4
Heat oil in a karahi. Put chopped onions and roast till soft and transparent. Add ginger garlic and green chillies. Stir and roast for 2 minutes.
* Step 5
Grate tomatoes and add. Put salt and sauté till tomatoes are cooked and oil leaves the karahi.
* Step 6
Add mashed eggplant and mix well.
* Step 7
Add all spices powder. Cook till ingredients combine well and eggplant is cooked completely.
* Step 8
Garnish with chopped coriander leaves and green chilli.
