Calamari stewed in Tomatoes

Calamari stewed in Tomatoes

Cooking instructions

* Step 1

Heat the olive oil in a large pot over medium-high heat. Add the onions and fennel. Sauté about 5 to 6 minutes.

Add the Garlic cloves and Tomato paste and stir well. Cook this for another 2 to 3 minutes, stirring occasionally.

Stir in the wine and increase the heat to high. Boil until the liquid is reduced by half.

* Step 4

Add the Sambuca and the Tomatoes. Stir well.

* Step 5

Stir in the Calamari and reduce heat simmer for at least 1 hour. Taste a piece of calamari, it should be tender. If it’s not, keep simmering.

* Step 6

Add Salt and Pepper. Add the chopped parsley. Stir well to combine and serve with cooked Pasta.
