Tagliatelle with chanterelle mushrooms and guanciale

These mushrooms are in season at the moment and they pair wonderfully with pasta. I added guanciale (you could use pancetta) to make this tasty primo piatto

Cooking instructions

* Step 1

Bring a pot of salted water to the boil. Meanwhile, cook shallot and guanciale together in a pan. When the guanciale starts to crisp, add the mushrooms. Cook for about 7-8 minutes

Add the pasta to the boiling water, and cook according to instructions. Drain pasta al dente, and add to sauce. Mix and serve with fresh parsley
