Great side dish or to be honest, I could just eat a plate full as is! #potatoes #sidedish #vegetarian

* Step 1

Boil potatoes in salted water in their jackets until tender. Remove from the water and cool a bit. Preheat oven to 200. Coat potatoes in olive oil. Slice them open without cutting all the way through. Place in a baking tray lined with baking paper. Add a good teaspoon of Parmesan and drizzle with olive oil

Pop in the oven for about 25-30 mins until golden and crispy
