Frittelle di zucchine
These courgette fritters are absolutely delicious and easy to make. Proving time needed, but well worth the wait. A fantastic addition to any picnic, buffet or lazy dinner between friends. I served them together with foccacia, prosciutto, cheese and olives #mycookbook #italian #starter #picnic #vegetarian

30 mins + 3 hrs
Cooking instructions
* Step 1
Remove the ends from the courgettes. Grate them and place in a colander with a sprinkle of salt to drain. Leave for 15 mins. Use the back of a spoon to squeeze out excess water
* Step 2
Put flour in a bowl. Add yeast, another sprinkle of salt and slowly add the water. Mix with a fork to form a wet and sticky dough
* Step 3
Now add parmesan and the grated courgettes. Mix well again until combined and homogeneous. Cover with cling film and set a side to prove for about 3 hours
* Step 4
After proving time, heat a large amount of oil in a pan or wok. Spoon the mixture in batches into the hot oil. Turn and fry for about 3-4 mins until golden brown and cooked through. Drain on kitchen paper and sprinkle with a little more salt to taste
* Step 5
Serve and enjoy in good company
